HEAD SOMMELIER
Main purpose:
The Head Sommelier is responsible for creating a suggesting to our Guest the perfect pairing for him/her to enhance the culinary experience. He/she is in charge of the beverage service of the restaurant.
Reports to: F&B Manager.
Main duties & responsibilities:
• Create a personalised interaction with the Guests and a tailor made culinary experience for each one of them, according to the company policies, procedures and standards;
• Responsible for the wine program, from sourcing exceptional bottles to designing a dynamic and engaging wine list that complements the culinary experience;
• Design and evolve the comprehensive wine list;
• Oversee all aspects of the Hotel prestigious wine cellar, ensuring optimal storage, inventory management and seamless service;
• Monitor wine movement, analyse sales trends and optimize our inventory for maximum efficiency;
• Create and maintain a professional relationship with Guests, Colleagues and with top wine producers ensuring access to the finest and exclusive labels;
• Develop and implement innovative upselling programs that not only enhance our revenue but also inspire our Team and Guests about the world of wine;
• Anticipate guests needs and handle Guest comments and complaints when needed;
• Develops special wine events;
• Assist the Restaurant Manager on monitoring stock levels and alignment to the department financial objectives;
• Responsible for the achievement of the economic targets of the restaurant with a deep knowledge of the restaurant offer and appropriate suggestions and recommendations to Guests;
• Handle administration tasks as required;
• Comply with H&S national rules and company instructions.

Competencies required:
• Collaboration: Be able and willing to work as a team within the department and with other departments.
• Personal Effectiveness & Communication: Demonstrate self-control and present information clearly and with confidence.
• Personal development: Be open to and accept constructive feedback and use it to improve. Ongoing dialogue with Head of Department on own performance objectives.
• Business orientation: Be able to follow guidelines and priorities assigned by Head of the Department in order to achieve goals in a timely and satisfactory way. Perform his/her tasks with integrity.
• Technical Skills: Demonstrate technical competence and knowledge related to the role.
Other requirements:
• Professional experience, preferably in luxury hotel, in the same role;
• Fluent in Italian and English at a proficient level, a third language is preferred
• Professional Sommelier certification as AIS, FIS or WSET
• Extended Professional knowledge of Italian cuisine and Italian & International wines;
• Knowledge of F&B management software e.g. Symphony, FutureLog), and Microsoft Office package.
• Flexibility;
• Attention to detail;
• Valid HACCP certification.
